Baked feta with honey, orange & thyme

If you’re new to baked feta you’re in for a treat. Take all that fresh, salty, crumbly deliciousness you’d associate with feta and imagine it served hot, spread generously on your favourite crusty bread. Add to that the sweet, balancing flavours of orange and honey with a touch of thyme and your feta will simply sing. This one’s made for sharing. 

 Serves 2 

Ingredients:

1 block feta (200g) 

I small orange (finely grated peel and a squeeze of the juice) 

1 tbsp olive oil 

2 tbsps honey (a lighter one such as acacia or orange blossom works well) 

3-4 sprigs fresh thyme 

To make: 

Pre-heat oven to 200 degrees C

  1. Place the block of feta directly into a small baking tin or enamel tin 

  1. Whisk the orange zest, juice, olive oil and honey together and pour over the feta 

  1. Scatter the thyme sprigs on top (wash first and slightly squeeze the small leaves to release the fragrance) 

  1. Bake in the oven for 20 mins until golden 

 Serve immediately with warm bread and a fresh green salad for a deliciously fresh and fragrant light meal.
